1896, Ott, an Alsatian agriculturalist with a pioneer spirit, set out to create a wine-producing estate. 

The first attempts were in the region of Cavalaire. It was in 1912, however, at Château de Selle, Le Clos Mireille, and later at Château Romassan, also located in the Var, that this great family venture was ultimately launched. , after years of patience, hard work and perseverance. The cultivation principles, inspired by a profound respect for nature, are uncompromising. Fortunately, the land rewarded this respect by giving great vines that made outstanding quality wines. As early as 1930, the "Coeur de Grain" rosé made its way over the border. And today, the elegant, prestigious vintages produced by Domaines Ott can be found in the finest dining establishments the world over. 

In 2004, with more as 100 years of experience, Domaines Ott became part of with Champagne Louis Roederer Group. A true synergy takes place around these craftsmen of high-class wines., 35% Cinsault, 


Viticulture
The land is here is rather poor and made up of limestone, sandstone and marl of the lateCretaceous marine period. The poor fertility is offset by the stone content in the soil.The area cultivated on the estate covers 60 hectares including 40 leased hectares enabling regular control over the cultivation process. Between 1956 and 1986, the vineyard was revamped to re-group the parcels and thus allow for easy passage of modern machinery. Vines were reorganised into vast terraces with varying exposures.
Cultivation methods are traditional and the earth is mechanically tilled and young shoots are trained with the greatest care to the plant.


Wine Making
• Hand picking.
• Highly selective grape sorting.
• Extremely delicate pressing process at low pressure.
• Fermentation in thermo-regulated vats followed by ageing in oak casks and vats for 6-8 months.
• Bottled in spring


Tasting Notes
Colour: Pale salmon pink colour.


Nose: At first aromas of stone fruit, particularly peach, quickly tending towards red fruit and white flowers, with a trace of sweet spices such as cinnamon.


Palate: The attack on the palate is silky, evolving rapidly towards a rich and solid structure. Very generous, remaining on notes of stone fruit. A vinous finish with spicy dominance
